Lately, I’ve been on a quest to eat a bit more healthier, which you can read on my other blog here and here. But sometimes, you need a little bacon in your life. This recipe was introduced to me years ago by a friend (my husband practically begged me to get it) and it’s become a favorite at parties in recent years as a great appetizer. I know something is good when even my mother-in-law wants the recipe! We actually recently did this as a main item for dinner (totally unconventional dinner, I know) because it can be rather filling and I was personally craving them!
What You’ll Need:
- 1 pound Bacon (preferably Maple or Brown Sugar)
- Chicken breasts, cubed in 1 inch squares or slightly smaller if you prefer
- 2/3 cup brown sugar (I prefer the dark brown)
- 2 tablespoons of chili powder
- toothpicks (don’t do colored toothpicks. The color will bleed into the chicken)
Preheat oven to 350. Mix the brown sugar and chili powder together. Cut bacon strips into thirds (I usually start rolling the chicken in the bacon and cut once it’s wrapped around the chicken once). Secure the bacon around the chicken with a toothpick. Then roll the wraps in the brown sugar/chili mix and place into a large baking dish. Cover with foil and bake for 35 minutes.
If you’re taking this dish to someones house, please remember to put it on a separate dish (or in another baking dish). The very first time I took this to someones house for a BBQ, we were running late and I let it cool a bit on the stove, then we just put it on the ground in the back seat (covered, of course, with the foil). Bad idea. I’m not sure what we were thinking. The grease that the bacon created got everywhere on the floor of the car…yeah…I was also twenty-one at the time…Can age be my excuse on that one?
