Strawberry Preserves Puff Pastry

We are knee deep in baking season and it’s far from over! When there’s even the idea of cooler weather, I love to think of a few goodies I can bake. At least that’s what I used to think! Back in the Summer, I discovered the baking urge hit me quite a bit and it all had to do with strawberries!

I won’t tell you how many Strawberry pies I made (three)…This was my first Strawberry Pie I made over the Summer and the first Strawberry Pie I ever baked! I’m excited at how my pies turned out, but I’m still experimenting. I’m hoping to get the recipe just right and share it with you next year!

The other strawberry baked good I made is this simple puff pastry using Strawberry Preserves! I didn’t follow a recipe, just did it all by feel – I’d never played with puff pastry before and had to dive right in! And guess what? It turned out amazingly and I’m so excited to share it with you!

What You’ll Need:

  • Puff Pastry sheet(s), thawed
  • Strawberry preserves (1 tablespoon for each puff pastry rectangle to be cut)
  • 1 egg, beaten
  • Powdered sugar

Preheat oven to 400 degrees. Take one puff pastry sheet and cut it half. Cut each half into three equal parts, creating rectangles.

Take one tablespoon of the strawberry preserves and put in the middle of the lower half of the rectangle. Repeat for the rest of the rectangles.

Take the egg and brush the outer perimeter of each rectangle. Fold in half and pinch sides closed as best you can. Then egg wash the tops of each rectangle. Bake for 15 minutes.

Look how beautiful and golden! Now here comes one of the best parts, aside from eating it – dust the puff pastry with powdered sugar!
